Spinach Smoothie

Spinach...in a smoothie? Don’t let the title fool you. Though each serving is packed with an incredible full cup of the nutritional powerhouse, the sweetness of fresh strawberries and banana is undoubtedly front and centre in this deliciously drinkable treat, ideal for breakfast or an afternoon boost. This refreshing smoothie is an easy way to work spinach into your kids’ diets – they’ll love the taste and colour!


1/2 cup low fat vanilla yogurt 500 mL
2 cups water 500 mL
1 medium banana 1
1 cup sliced Southern U.S. strawberries (about 6) 250 mL
2 cups fresh chopped Southern U.S. spinach, lightly packed 125 mL
  Honey or maple syrup (optional)  


In blender, combine yogurt, water, banana, strawberries, spinach and honey or syrup (optional). Blend on high until smooth. Pour into glasses and serve.

Makes 2 servings.

PER SERVING: about 120 cal, 5g pro, 2 g fat (1 g sat. fat), 25 g carb, 4 g fiber, 5 mg chol, 75 mg sodium. %RDI: 15% calcium, 8% iron, 60% vit A, 100% vit C.

Prep Time: 5 min.

Tip: For a thicker smoothie, use a frozen banana. For a colder smoothie, start by replacing one cup of water with chopped ice.
