Sweet onions nestled in a soft bed of phyllo pastry. These galettes look delicate but have a very distinct taste. Serve as an appetizer or as a unique side at an evening meal.


3 Go South! sweet onions (Texas 1015 or Vidalia) 3
2 tbsp butter 30 mL
1 tsp dry mustard powder 5 mL
1 tsp minced fresh thyme 5 mL
1/2 tsp salt and pepper 2 mL
1 cup shredded Gruyère cheese 250 mL
1/2 package frozen puff pastry, thawed 1/2


Cut onions into 1/4 inch (0.6 cm) thick slices.

In heavy skillet, melt butter over medium high heat. Add onions, stirring occasionally until deep golden brown, about 10 minutes. Sprinkle with mustard powder, thyme, salt, pepper. Reduce heat to low, cover and cook gently stirring occasionally, until onions are very tender and creamy; about 20 minutes. Let cool.

Roll out pastry according to package instructions. Cut pastry into 4 squares. Place 1/4 cup (50 mL) of cheese in the centre of each piece. Divide onion mixture over cheese. Fold up edges of pastry over onion filling.

Arrange galettes on parchment-lined baking sheet. Bake in 400 F (200 C) oven until pastry is golden, about 15 minutes.

Makes 4 galettes.
